Fresh Cheese

Dear Friends,

We are in the initial process of making Fresh Flavoured Soft Cheese and Feta style Cheese at Sttudio 292. The Cheese is freshly made in small batches from Cow’s milk sourced from a friend’s farm where the cows are grazed on naturally grown grass and hay. In all respects the milk is organic without the use of hormones and the cheese is made without using preservatives. Made in small batches it keeps for a week in the refrigerator. These will make a good addition to your cheese platters, appetisers, salads, bakes and desserts.

Flavours for the soft cheese available are ~

Natural Flavour ~ Good on its own, excellent for using in desserts and bakes.
Mixed Herbs ~ A mild tasting cheese flavoured with dried mixed herbs.
Cracked Black Pepper ~ A hint of heat from the cracked peppers.
Roast Garlic & Red Chilli Flakes ~ Aromatic garlic paired with fiery chilli flakes.

Plain Feta style Cheese  ~ Young, soft, with a tang of salt.

Bonsai Workshop

The word “Bon-sai” (often misspelled as bonzai or banzai) is a Japanese term which, literally translated, means “planted in a container”. This art form is derived from an ancient Chinese horticultural practice, part of which was then redeveloped under the influence of Japanese Zen Buddhism. It has been around for well over a thousand years. The ultimate goal of growing a Bonsai is to create a miniaturized but realistic representation of nature in the form of a tree. Bonsai are not genetically dwarfed plants, in fact, any tree species can be used to grow one. – Bonsai Empire

Come to Sttudio 292 and learn the art of Bonsai from Mr.Sanjeev Suri, who comes from a family of plant lovers. He developed interest in gardening watching his grandfather and father toiling endlessly over the right pot for a plant and the correct soil combination. Soon this hobby became a passion. Sanjeev is a self taught and hands on gardener or more of a ‘seasonal gardener’ as he like to call himself. He specializes in bonsai and is always more than happy to share his knowledge with all plant lovers.

Online Cook – Along

Dear Friends,

This is for the Bakers, Cooks, experienced – inexperienced, novices in the kitchen or anyone just looking for some cooking fun.

I’m starting an online Cook-Along, where I will post a recipe taken from a Cook book, a food blogging site or a well known Author and you can follow the recipe and cook or bake at home. This is a chance to try new recipes with other participants but in the comfort of your own kitchen. I’m sure there will be some interesting insights, experiences, disasters and successes along the way, but that’s the fun of it. As a group we can help each other with our own kitchen experiences, subtle changes to the recipe and a general hands on insight.

Dear Friends,

I have received many calls, mails and reminders for the Workshops to be held in March. It feels really good that you all look forward to my Mailers and Workshops. Thank you for appreciating my creative meanderings and please bear with me for not putting up the March Calendar yet.

The reason for this is the ‘once in my lifetime occasion of turning 50’, the great Five-O. So got busy in celebrating the great event and the celebrations have taken longer than I imagined. Mentally I’m still in that space of celebrating.

I’m using this ‘Off’ time to come up with more interesting ideas for Workshops, Talks and Presentations in the realm of Culinary, Art and Wellness. The group showing an interest in Sttudio 292 has grown and I’m sure has many talented members. I would welcome their input and participation in the activities held at Sttudio 292. Pop Art Exhibition

‘The art around Pop Culture is young, brash and fun. It’s a mode of change, subjects being iconic in nature and abstract in expression. It doesn’t look like a painting of something, it looks like the thing itself. ‘

Tina Bhasin learnt how to work with glass at Urban Glass Studio, Brooklyn, New York, the largest Glass Art Center in the US. She has been working with glass in India since 2005 at her Studio in Surajkund. Using Coloured Glass as a medium, she treats each piece differently and works on it to give it definition. The artwork is handcrafted using different glass work techniques from conceptual drawings to finished pieces. Each piece is a unique and special creative expression.

Cooking something exotic and can’t find the fresh herb in the market. Come to Sttudio 292 and learn to pot and grow your own herbs. Step by step you will be guided in the techniques of planting your seedlings and seeds of various herbs in a single pot. Information and advise on how to tend to your herbs will also be imparted.

Hands on class with all supplies included. You return home with a pot of home grown herbs to use in cooking delicious meals for family and friends.

Coffee/tea with snacks using herbs will be served.

Apples in Abundance

Its that time of the year again, when the market is flooded with local apples from Himachal Pradesh. The Red Delicious variety, crunchy, juicy, tart yet sweet. And we have had a bumper crop this year. So come to Sttudio 292 for a cook-along featuring the delicious apple.

Children’s Edible Craft Workshop

Sttudio 292 held its much awaited Children’s Edible Craft Workshop on June 19, 2013. Inspite of much groaning from both parents and children about being away on holiday on the day the workshop was going to be held, we still held it for the few remaining back in Gurgaon.

On the menu was Coleslaw Sandwiches, Butterfly Cupcakes, Pasta Salad, Rocky Road Bars and finished with cold Lemonade.

I think more marshmallows were eaten plain than put into the Rocky Road Bars and the Cupcakes rose beautifully to the occasion. Much fun was had peeling and grating the carrots for the coleslaw. Chopping the cabbage was taken on by the older students. Cutting up the Bellpeppers for the Pasta salad again saw much competition among all present. But the best fun was had decorating the cupcakes with colourful frosting and sprinkling with various toppings like coloured sugar, edible silver balls, gems.

The Cupcakes and Rocky Road Bars got eaten before the Sandwiches and the Pasta Salad, proving that sweets & desserts are more in demand than savories. Well, it was a hectic morning but much enjoyed as you can see by the happy faces. Till next time!!!!

Bake – Along, Chocolate

Sttudio 292 hosted its first Bake-Along on Tuesday, June 11th. The ingredient chosen for this Bake-Along was the universal favourite Chocolate. Participants were invited to spend a morning sharing their favourite chocolate cake, biscuit or dessert with other enthusiastic bakers over coffee at Sttudio 292.  Every participant brought 1 item with chocolate in it and shared the recipe and the  baked item with other participants.

Vaishali’s chocolate cake had a delicious Chocolate Ganache topping.
Chocolate Ganache :
Ingredients :
50 gms Dark Chocolate, chopped finely
25 gms Butter
3 tsp Whipping Cream
30 gms Icing Sugar

Method :
1. Combine the chopped chocolate, butter, cream and icing sugar in a small pan.
2. Stir over low heat (double boiler) until the mixture is smooth and glossy.
3. Spread the icing over the top of the cake, using a flat bladed knife.

Low Fat Chocolate Cake
Ingredients :
2 cups sugar
1 1/2 cups flour
1 cup cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla essence
1 cup boiling water

Method :
1. In a large bowl combine all ingredients except boiling water and beat at medium speed for 2 minutes.
2. Stir in boiling water. Bake upto 30 minutes at 120 degrees .
NB. The cake mixture is of ribbon consistency .

One of our young baking enthusiasts, Aditi, baked us some Brownie Biscuits. They were crisp on the outside, yet had a brownie cake texture on the inside.

Saniya’s Chocolate Cupcakes were very professional. The look, the texture and the taste, could rival most bakery made cupcakes.

Madhumita made a real effort with her Chocolate Orange Cheese Custard in Orange Cups. She made cups out of the oranges she used for the recipe and filled them with the custard. I’m sure it was hard work but much appreciated by all. They looked very pretty and colourful and begged to be eaten.

Orange Cups :
Cut the Oranges horizontally. Take out the orange segments from the half cut oranges. Use the Orange Shells as cups to set your custard/mousse.

Manonita was full of energy and passionate about her baking. These skills took her through three rounds of Masterchef India. She shared her recipes for Pinwheel Cookies and Chocolate Date cake with us. The cookies were buttery and absolutely delicious. The date cake was made in the microwave in 6 minutes.

Truly Thai by Rred Hot Cafe

Truly Thai, the culinary class by Rred Hot Café, had complete registrations within 1/2 hour of promotion. This is because the taste and authenticity of the food by Rred Hot Café is undeniably good. People who had tasted their food before or not, all wanted to learn how to make delicious Thai food from the experts.

Mrs.Ritu Mehra, guided the guests of Sttudio 292 through the intricacies of making,  Thod Man Khapod (Thai Corn Cakes), Seasonal Raw Mango Salad, Kaeng Khieo Won Chai (Thai Green Veg. Curry), Kai Phat Met Mamuang (Chicken with Cashewnuts), Phad Thai Flat Noodles.

After the demo, the guests sat down to a delicious meal, featuring all the dishes taught. Everyone was unanimous about how great the food tasted. I’m sure many will go back and try their hand at making these dishes at home, to the delight of their families.

Ok, people summer is really here. No more lovely showers to cool the evenings. The heat and hot winds are taking a toll already and nobody is looking forward to June. Taking the heat into consideration, the first event hosted at Sttudio 292 was a success. A Wellness Workshop “Women’s Health for Menopause” was held by senior gynaecologists, Dr.Mukta Kapila and Dr.Swati Mittal from Fortis Hospital, Gurgaon. We had a record number of participants. Various topics related to this subject were touched on in an inter- active way. Keeping the participants to a limited number of 12, and generally of the same age group, we were able to discuss personal experiences and problems with the class and the Doctors and got replies to our questions in a personal manner.
Later over tea everyone could have a one-to-one conversation with the Doctors and clear further doubts.

I had fun researching food that was beneficial for people undergoing Menopause. The snacks for tea were made taking this into consideration. Spinach and Feta Pie, Corn and Bellpepper Spicy Salad were both without any fat, so  healthy and tasty too. Oat biscuits and a Banana Loaf, though using some butter were highly nutritious, something to make and keep to satisfy the sweet cravings.

There was a post on my friend Ginny Grewal’s facebook page for “Fat Flush Water”. I made jugs of this for the guests of Sttudio 292 and they were much appreciated. In fact I had to refill the jugs numerous times. Sharing this recipe.

FAT FLUSH WATER

1 Jug water (1 1/2lts)

1 tangerine, sliced

1 medium cucumber, sliced

10-20 mint  leaves

Ice – as much as you like

Directions:  Rinse tangerine, cucumber and mint leaves. Slice cucumber and tangerine. Combine all ingredients in a jug with 11/2lts water. Allow ingredients to sit as long as possible for maximum benefits. Drink throughout the day.  You can use the fruit two days in a row, just add more water on day two.

The Tarot Card Interpretation sessions took place on May 20th. Private consultations were booked with tarot card reader, Prritti S Goenka and the feedback received, “She is good”, “Very accurate”.
