Do you have a load of used lemon rinds left over while using lemon juice for cooking or at your bar? Don’t throw away the lemon rinds, instead use them to make a SIMPLE LEMON SYRUP.

 

 

Lemon rinds are acidic enough to dissolve up to half their weight in sugar, giving a nice, clean lemon syrup. Pressing the rinds helps to express the lemon’s essential oils which add to the flavour.

 

 

Simple Lemon Syrup

Ingredients ~

21/2 cups used lemon rinds

1 cup sugar

Method ~

  1. Mix the lemon rinds and the sugar in a glass bowl.
  2. Stir this mixture every now and then till the sugar is dissolved.
  3. Squeeze the lemon rinds to get as much juice out of them as possible.
  4. Strain the lemon syrup into a glass bottle.
  5. Make delicious lemon based drinks using water, soda or be adventurous and add alcohol.
